57. Honey Syrup

Ingredients

1 1/2 cups honey

1/2 cup water

1/4 cup fresh lemon juice

1/2 teaspoon grated lemon zest

Direction

Mix the lemon zest, lemon juice, water and honey together in a small saucepan. Put over medium heat, cook and stir sporadically until it boils. Keep boiling until the mixture evaporates by a forth. Pour warm syrup on top of cake, let rest for several minutes then serve.
